Served with yuzu ponzu dressing and mandarin spherification, inspired from the country who is well known for a delicious seafood, Philippines.
THE EXPEDITION – A5 Wagyu
Best meat quality from Japan, A5 wagyu steak, served with a sautéed shaved asparagus, fermented garlic and tomato jam.
THE DISCOVERY – Caviar
Our very own in house made caviar, with a black sesame caviar, mix with yuzu mousse, black truffle ganache and mushroom jelly
